The land is the departement is predominantly rural with 75% of it being used for growing crops such as wheat and oats.  The butter produced in Echire a town in the departement of Deux-Sevres is said to be the best French butter.  Perhaps this is due to the vast lush open spaces on which the cows of the departement can graze?  Other local specialities are goats cheese and the famous Tourteau Fromage, a local cheesecake with a black crust.  It’s well worth a try.
