I'm looking to book my first skiing holiday to France next year sometime so would appreciate any feedback on best places to go for new (but confident..!!) skier.

Your first decision is Alpes or Pyrenees basically. For most people this is a budget decision. Alpes is more glamourous and so holiday rentals in Chamonix or holiday rentals in Val d'Isere will be a fair bit more expensive than say holiday rentals in Font Romeu.
If money's not an issue then I would go for Val d'Isere holiday rentals myself. It's fab. A bit cheaper is Chamonix holiday rentals, also very nice and at the lower end of the spectrum I like Font romeu holiday rentals or Les Angles holiday rentals. These are more "Local" destinations but still good.
